Nestled under the Southern Alps along the West Coast of the South Island, bees forage on remote expanses of the Southern Rātā tree. The rare and brilliant scarlet-coloured flowers only blossom every few years. Rātā honey is very light in colour, and has a distinctive silky smooth buttery texture with a fruity aroma. The delicate taste makes it one of the finest honeys in the world.
